Windmill Hill is an impressive Grade II listed mansion house set on the
Sussex Downs, close to Hastings. Being one of our larger centres with a capacity of 450 guests, this centre would appeal to people who enjoy being part of a large senior team and managing a group of Catering Assistants.

You will need to be available to undertake Duty Manager shifts on a rota
basis with other senior staff. In addition, you will be responsible for the
training, development and the day-to-day staff management of your team at
varying stages of their catering career.

We’re looking for a team player who is able to interact well, has excellent communication skills and a keen customer focus. This is a hands-on Head Chef role, utilising your food preparation skills whilst working within a small team to ensure excellent customer service.

Hours of work are based on 42 hours over a 5 day working week of split
shifts. The majority of our guests are under 17 so our catering team rarely
work beyond 8pm.

This permanent Head Chef position is offered at £17,250-£18,000 per
annum, based on experience.

The Role

Responsibilities
As Assistant Restaurant Manager you will:

* Ensure that customer care levels within the Restaurant are maintained at the highest degree possible by demonstrating a "hands on" management style, effectively utilising and motivating staff to exceed guest expectations by leading them from the front and by example.
* In liaison with the Restaurant Manager ensure that all employees receive full training in the departmental standards recording it on the training matrix.
* Assist the Restaurant Manager to carry out regular appraisals and job chats with all Restaurant staff
* In the absence of the Restaurant Manager, attend all relevant meetings and ensure that all ideas/issues are communicated throughout the department
* Be aware of your responsibilities under the Licensing Laws and Weights & Measures Act, ensuring that staff adheres to the rules at all times.
* Assist in carrying out monthly inventory checks or any other asset stock checks.
* Ensure forward planning by constantly monitoring business levels in the Restaurant diary, ensuring all function sheets is recorded correctly, ensuring adequate staffing to cover the level of business.
* Maintain Food and Beverage profit by monitoring wastage and breakages and implementing remedial actions.
* In liaison with the Restaurant Manager minimizing the labour cost by monitoring the rotas and business levels on a day to day basis.
* Ensure all revenue in the Restaurant and Mini bars is maximised through correct billing and accounting procedures.

Desired Qualifications / Experience:
* Ideally a college Graduate in Hotel Management or European Hotel Apprenticeship scheme
* Minimum of 2 years experience in a quality hotel, including experience in all F & B departments (Rest/Bar/ Room Service/ Conference & Banqueting)
* Must have excellent spoken & written English and good Administration skills
* Must have previous Supervisory or Management experience
* Proven training skills essential.
* Good H & S and Food Safety knowledge essential, ideally basic level qualification
* Self-motivated - and able to motivate others
* Excellent communication & interpersonal skills with a professional manner

Remuneration
