• Exceeding and maintaining housekeeping and cleaning standards
• Organising staff to achieve and optimise effectiveness
• Ensuring that all defects are reported to appropriate departments
• Maintaining linen and hardware inventories to an effective stock control level
• Adhering to all Health and Safety requirements including COSHH
• Ensuring all staff are trained to Health and Safety standards and company requirements
• Managing staff and schedules through excellent communication
• Inspiring and motivating your team to deliver the highest level of service and customer experience

The position is part time, 21 hours a week at our Windmill Hill Centre, East Sussex, BN27 4RZ.

Head Chef Vacancy in East Sussex

We're looking for an experienced Head Chef to join the team at Windmill
Hill, our children’s activity holiday centre in East Sussex.

PGL Travel is the UK's leading provider of residential activity holidays
and study courses for young people. Windmill Hill has fantastic on-site
facilities in its 21 acres, with several small lakes and an indoor sports hall.
All this great outdoor space means that our guests build up quite an appetite;
our Head Chef role is crucial!

The Head Chef will take charge of the catering operation, heading up a team of Chefs and Catering Assistants. You will be in sole charge of food preparation on centre ensuring the catering team are producing nutritional, varied, balanced and tasty meals for guests and staff. You will also be responsible for food prep, kitchen hygiene, kitchen administration in accordance with all current catering legislation and company policies while ensuring effective budgetary monitoring and controlling to achieve set targets.

Windmill Hill is an impressive Grade II listed mansion house set on the
Sussex Downs, close to Hastings. Being one of our larger centres with a capacity of 450 guests, this centre would appeal to people who enjoy being part of a large senior team and managing a group of Catering Assistants.

You will need to be available to undertake Duty Manager shifts on a rota
basis with other senior staff. In addition, you will be responsible for the
training, development and the day-to-day staff management of your team at
varying stages of their catering career.

We’re looking for a team player who is able to interact well, has excellent communication skills and a keen customer focus. This is a hands-on Head Chef role, utilising your food preparation skills whilst working within a small team to ensure excellent customer service.

Hours of work are based on 42 hours over a 5 day working week of split
shifts. The majority of our guests are under 17 so our catering team rarely
work beyond 8pm.

This permanent Head Chef position is offered at £17,250-£18,000 per
annum, based on experience.

Guest safety is always at the forefront of our minds. Our Security Assistants ensure that people and deliveries on centre are properly checked in. With a pleasant and welcoming smile, you'll make sure that the centre is safe and secure 24 hours a day.


More than 250,000 young guests enjoy a PGL trip each year, and we must ensure that we keep each guest safe and sound when they are tucked in for the evening.

The role includes a variety of functional tasks as well as being the first point of contact for visitors to the centre in the evening. You will be ensuring the security of the centre and well-being of the guests during night with regular checks and patrols as directed to you by the Duty Manager. Furthermore you’ll be able to use your handy skills to perform some site work.

The job entails some site presentation duties as well as occasional guest care responsibilities and the task to deal with any issues that the guests might encounter. Solving guests' problems can be very rewarding.

Additionally you may have the chance to try your centre's activities during your free time, building up your personal competency in the process. You may also participate in evening entertainments for our guests.

As one of our Administrators you will play a key part in the overall organisation of centre life for both guests and staff.
Our centre administrators are vital for the smooth functioning of the centre office. If you are looking for a broad role with plenty of variety, then this role will give you exposure to many different sides of the business whilst giving you the chance to practice your French language skills.
Key Duties
With responsibility for the centre accounts, liaison with local suppliers and running the centre office, you will provide admin support to your Centre Manager and senior team. This could involve timesheets, petty cash, basic HR administration and purchase ordering. At some centres you may also be needed to take on the role of centre driver to run local errands and pick up supplies.
Training
You’ll join the PGL apprenticeship scheme for and an industry-leading package of training, support and qualifications and full training in all PGL’s admin systems will be given. You will also have a full induction to the company, its policies and be given relevant centre training. Throughout the season there will be opportunities to develop your computer skills. There are no age restrictions on our apprenticeship programme.
